Ingredients
- For the salad:
- 5 cups cooked rotini, penne or other bite sized pasta
- 2 tablespoons butter
- 1 small onion, chopped fine (appr. 1 cup)
- 2 cups cottage cheese
- 1/2 cup sour cream
- salt and pepper to taste
- 8 slices bacon, chopped and then fried (optional topping)
Instructions
- Melt butter in a large skillet. Cook and stir onion in melted butter until softened and translucent.
- Add the rest of the ingredients to the onions and stir to combine. Continue to stir over medium heat until heated through.
- Top with chopped bacon when serving. (optional)
