This old-fashioned dish is a bit like a deconstructed pierogi—tender noodles tossed with buttery caramelized onions, sour cream, and cottage cheese. It’s the kind of meal that feels like a warm hug, but it's incredibly easy to make.

Ingredients

  • For the salad:
  • 5 cups cooked rotini, penne or other bite sized pasta
  • 2 tablespoons butter
  • 1 small onion, chopped fine (appr. 1 cup)
  • 2 cups cottage cheese
  • 1/2 cup sour cream
  • salt and pepper to taste
  • 8 slices bacon, chopped and then fried (optional topping)

Instructions

  1. Melt butter in a large skillet. Cook and stir onion in melted butter until softened and translucent.
  2. Add the rest of the ingredients to the onions and stir to combine. Continue to stir over medium heat until heated through.
  3. Top with chopped bacon when serving. (optional)
