Blueberry buckle is a tender, buttery cake loaded with juicy blueberries and topped with a crisp, sweet streusel. It’s a nostalgic, homemade treat that’s perfect for a cozy morning with coffee or a laid-back brunch with friends.

Ingredients

  • For the streusel:
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 cup butter
  • For the cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cups sugar
  • 1/4 cup softened butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries

Instructions

  1. Preheat oven to 375 F
  2. Grease an 8" or 9" cake pan.
  3. To make the streusel topping: In a small bowl, mix together the sugar, flour, and cinnamon. Use a pastry blender to cut in the butter until the mixture is crumbly. Set aside.
  4. To make the cake: In another bowl, whisk together the flour, baking powder, and salt.
  5. In another bowl, using a handheld mixer or in the bowl of a stand mixer, beat together the sugar, butter, egg, and vanilla.
  6. Alternately add the milk and the flour mixture to egg mixture and mix only until blended. Add the blueberries and stir only enough to blend.
  7. Spread in the prepared pan and sprinkle the streusel mixture over the batter.
  8. Bake for 50 minutes or until a toothpick inserted in the centre comes out clean.
  9. Remove from the oven and set on a wire rack to cool for at least 10 minutes. Serve directly from the pan.
