Blueberry Buckle Coffee Cake
Blueberry buckle is a tender, buttery cake loaded with juicy blueberries and topped with a crisp, sweet streusel. It’s a nostalgic, homemade treat that’s perfect for a cozy morning with coffee or a laid-back brunch with friends.
Ingredients
- For the streusel:
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 1 teaspoon cinnamon
- 1/4 cup butter
- For the cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cups sugar
- 1/4 cup softened butter
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup milk
- 2 cups fresh or frozen blueberries
Instructions
- Preheat oven to 375 F
- Grease an 8" or 9" cake pan.
- To make the streusel topping: In a small bowl, mix together the sugar, flour, and cinnamon. Use a pastry blender to cut in the butter until the mixture is crumbly. Set aside.
- To make the cake: In another bowl, whisk together the flour, baking powder, and salt.
- In another bowl, using a handheld mixer or in the bowl of a stand mixer, beat together the sugar, butter, egg, and vanilla.
- Alternately add the milk and the flour mixture to egg mixture and mix only until blended. Add the blueberries and stir only enough to blend.
- Spread in the prepared pan and sprinkle the streusel mixture over the batter.
- Bake for 50 minutes or until a toothpick inserted in the centre comes out clean.
- Remove from the oven and set on a wire rack to cool for at least 10 minutes. Serve directly from the pan.
