Ingredients
- 1 package (16 ounces) spaghettini
- 1 pound uncooked medium shrimp, peeled and deveined
- 1 small onion, chopped
- 4 tablespoons olive oil
- 3 garlic cloves, crushed
- 1 zucchini, cut into small pieces
- 1 large tomato, chopped
- 2 cups fresh spinach, roughly chopped
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon basil
- 1/2 cup crumbled feta cheese
- 2 tablespoons lemon juice
- Lemon wedges
Instructions
- Cook spaghettini according to package directions.
- Meanwhile, in a large skillet, saute onion in oil until slightly softened (about 2 minutes), then add the shrimp and zucchini, and cook until shrimp turn pink.
- Add garlic; cook 1 minute longer. Stir in the wine, chicken broth, tomatoes, pepper flakes, basil, salt, and pepper.
- Drain spaghettini, reserving 1/2 cup cooking water. Add pasta and reserved water to the skillet. Stir in spinach, cheese and lemon juice; cook and stir until cheese is melted.
- Serve with lemon wedges and top with additional feta cheese, if desired.
