Ingredients

  • 1 package (16 ounces) spaghettini
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 small onion, chopped
  • 4 tablespoons olive oil
  • 3 garlic cloves, crushed
  • 1 zucchini, cut into small pieces
  • 1 large tomato, chopped
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon basil
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons lemon juice
  • Lemon wedges

Instructions

  1. Cook spaghettini according to package directions.
  2. Meanwhile, in a large skillet, saute onion in oil until slightly softened (about 2 minutes), then add the shrimp and zucchini, and cook until shrimp turn pink.
  3. Add garlic; cook 1 minute longer. Stir in the wine, chicken broth, tomatoes, pepper flakes, basil, salt, and pepper.
  4. Drain spaghettini, reserving 1/2 cup cooking water. Add pasta and reserved water to the skillet. Stir in spinach, cheese and lemon juice; cook and stir until cheese is melted.
  5. Serve with lemon wedges and top with additional feta cheese, if desired.
