Ingredients
- 3 tbsp olive oil
- 1 796 ml can of pumpkin puree
- 1 medium onion diced
- 4 cups chicken stock
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- dash black pepper
- 1/2 tsp cayenne pepper
- 1/2 cup half & half cream
Instructions
- Heat the olive oil in a large stock pot over medium-high heat, saute the onion until fragrant.
- Add the garlic and ginger, stir well.
- When the onions are translucent, add the pumpkin and stir well.
- Add the salt, pepper, cinnamon, nutmeg, cloves and cayenne and stir well.
- Add the chicken broth and incorporate.
- Puree the pumpkin mixture with an immersion blender or food processor.
- Stir in the cream.
