Ingredients

  • 3 tbsp olive oil
  • 1 796 ml can of pumpkin puree
  • 1 medium onion diced
  • 4 cups chicken stock
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • dash black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 cup half & half cream

Instructions

  1. Heat the olive oil in a large stock pot over medium-high heat, saute the onion until fragrant.
  2. Add the garlic and ginger, stir well.
  3. When the onions are translucent, add the pumpkin and stir well.
  4. Add the salt, pepper, cinnamon, nutmeg, cloves and cayenne and stir well.
  5. Add the chicken broth and incorporate.
  6. Puree the pumpkin mixture with an immersion blender or food processor.
  7. Stir in the cream.
