Ingredients

  • 2 tbsp olive oil
  • 1 large chopped onion
  • 1 large head of cauliflower, chopped into small florets
  • 4 cups chicken stock
  • 1/4 tsp garlic powder
  • 1/2 cup half & half cream
  • salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan, saute the onion gently for 4-5 minutes until it starts to go translucent.
  2. Add in the cauliflower, stock, and garlic powder. Bring to a boil and simmer for 15 minutes.
  3. Remove from heat and puree using an immersion blender.
  4. Return to heat, and stir in the cream. Season with salt and pepper to taste.
