These creamy, cheesy twice-baked potatoes take simple baked potatoes to a whole new level. Perfect for special occasions or when you just need a little extra coziness on your plate, these potatoes are sure to impress. Whether served alongside a hearty main or enjoyed on their own, they’re a crowd-pleasing favourite that’s both satisfying and easy to make.

Ingredients

  • 4 large baking potatoes
  • 2 tsp olive oil
  • 3 tbsp butter
  • salt and pepper to taste
  • 1/4 cup shredded Cheddar cheese
  • 1/4 cup shredded Havarti cheese
  • 1/4 shredded Mozzarella (optional for those who really love cheese)
  • ½ cup heavy cream
  • 1 egg yolk

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
  2. Rub potatoes with olive oil and sprinkle with salt to taste. Place on the baking sheet.
  3. Bake until a paring knife easily inserts into the center of a potato, about 1 hour. Set aside to cool, about 10 minutes.
  4. Cut 1/3 off each potato lengthwise. Scoop flesh from each potato to within about 1/8-inch of the skins. Reserve the scooped out potato in a bowl.
  5. Mash the reserved potato with butter. Add salt, black pepper, and cheese; keep mashing until cheese is melted. Pour cream and egg yolk into potato mixture; mix to combine. Taste and add more salt if needed.
  6. Fill each potato with an equal amount of the potato and cheese mixture. Gently press the surface of the filling with a fork to create texture.
  7. Bake stuffed potatoes until golden brown on top, 20 to 30 minutes.
