Pumpkin Muffins
Ingredients
- 1 cup white sugar
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 cup oil
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 cup pumpkin
- 1/2 cup chocolate chips (optional)
- 1/2 chopped pecans (optional)
Instructions
- Preheat oven to 350 F
- In a large mixing bowl beat eggs, add pumpkin and oil and beat with electric mixer or food processor. Add dry ingredients, mix. Add chocolate chips and/or chopped pecans if desired.
- Divide mixture into muffin tins and bake for 20-25 minutes.

4 mgBuried Cream Cheese Treasure Option: Combine 8oz softened cream cheese, 1 egg, 1/4 cup sugar and 1 tsp vanilla in a medium bowl and whisk until smooth. Place into a piping bag. Put mixture into a piping bag and pipe into the centre of each muffin or fill the muffins 3/4 full and drop 1 tsp of the cream cheese mixture into the centre, then cover with more muffin mixture. Bake as usual.
