As the cool, crisp air of autumn sets in, there's nothing more comforting than the smell of freshly baked pumpkin muffins wafting through your kitchen. These moist, flavourful treats capture the essence of fall with every bite, blending earthy pumpkin, aromatic spices, and just the right amount of sweetness. Easy to make and even easier to love, they're sure to become a cozy favourite in your home.

Ingredients

  • 1 cup white sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup oil
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 cup pumpkin
  • 1/2 cup chocolate chips (optional)
  • 1/2 chopped pecans (optional)

Instructions

  1. Preheat oven to 350 F
  2. In a large mixing bowl beat eggs, add pumpkin and oil and beat with electric mixer or food processor. Add dry ingredients, mix. Add chocolate chips and/or chopped pecans if desired.
  3. Divide mixture into muffin tins and bake for 20-25 minutes.

Buried Cream Cheese Treasure Option: Combine 8oz softened cream cheese, 1 egg, 1/4 cup sugar and 1 tsp vanilla in a medium bowl and whisk until smooth. Place into a piping bag. Put mixture into a piping bag and pipe into the centre of each muffin or fill the muffins 3/4 full and drop 1 tsp of the cream cheese mixture into the centre, then cover with more muffin mixture. Bake as usual.
