Ingredients
- 2 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp baking soda
- 1/2 tsp Salt
- 1 large egg
- 1/2 cup milk
- 1/4 cup melted butter
- 1 cup pumpkin (no spices)
- 1 cup butterscotch chips (optional)
- 1/ cup chopped pecans (optional)
- 1/4 cup butterscotch or caramel ice cream topping
Instructions
- Preheat oven to 350 F
- Measure first 7 ingredients into a large mixing bowl. Stir. Make a well in the centre.
- Beat next 4 ingredients with a whisk and add to well.
- Stir until just moistened.
- If desired, add butterscotch chips and pecans. Stir and spread into a greased loaf pan.
- If desired, drizzle ice cream topping over the loaf.
- Bake for 1 hour or until a toothpick inserted into the middle comes out clean.
