Whether you're enjoying this moist and delicious pumpkin loaf for breakfast or a cozy afternoon snack, this pumpkin loaf makes the perfect fall treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp Salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 cup pumpkin (no spices)
  • 1 cup butterscotch chips (optional)
  • 1/ cup chopped pecans (optional)
  • 1/4 cup butterscotch or caramel ice cream topping

Instructions

  1. Preheat oven to 350 F
  2. Measure first 7 ingredients into a large mixing bowl. Stir. Make a well in the centre.
  3. Beat next 4 ingredients with a whisk and add to well.
  4. Stir until just moistened.
  5. If desired, add butterscotch chips and pecans. Stir and spread into a greased loaf pan.
  6. If desired, drizzle ice cream topping over the loaf.
  7. Bake for 1 hour or until a toothpick inserted into the middle comes out clean.
