Ingredients
- 4 boneless chicken breasts cut into bite-size pieces
- 3 eggs, whisked
- 1/4 cup cornstarch
- 1/4 cup flour
- 1/4 teaspoon salt
- oil for frying
- For the sauce:
- 1 cup orange juice
- 1/2 cup sugar
- 2 tablespoons white vinegar
- 2 tablespoons soy sauce
- 1½ teaspoons Asian sesame oil
- 1/4 teaspoon ginger
- 2 garlic cloves, crushed or finely chopped
- 1/2 teaspoon chili flakes
- 1 tablespoon cornstarch
Instructions
- For the Orange Sauce:
- In a small pot, over medium heat, heat orange juice, sugar, vinegar, soy sauce, Asian sesame oil, ginger, garlic, and chili flakes until it begins to bubble.
- In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water to form a paste. Add to orange sauce and cook until the mixture begins to thicken (appr. 4-5 minutes), then remove from heat.
- For the Chicken:
- Stir flour, cornstarch, and salt together in a bowl.
- Whisk eggs in shallow dish.
- Dip chicken pieces in egg mixture and then flour mixture. Place on a plate.
- Heat 2 -3 inches of oil in a heavy-bottomed pot over medium-high heat.
- Working in batches, and turning often, cook the chicken until it is cooked through and golden brown. Place chicken on paper towels to soak up the excess oil.
- Toss chicken with orange sauce. Garnish with sliced green onions.
