Ingredients
- For the salad:
- 5 cups rotini, penne or other medium sized pasta
- 1 1/2 cups english cucumber diced
- 1 pint grape tomatoes halved
- 1 bell pepper, any colour, diced
- ½ cup kalamata olives
- ½ cup crumbled feta cheese
- 1/3 cup diced red onion
- For the dressing:
- ¼ cup red wine vinegar
- ⅓ cup olive oil
- ½ teaspoon garlic powder
- 1 teaspoon dried oregano
- salt and pepper to taste
Instructions
- Whisk dressing ingredients together
- Combine all salad ingredients in a large bowl. Add dressing and toss.
- Garnish with a wedge of lemon when serving.
