Ingredients
- For the meatballs:
- 1 lb ground chicken
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 2 garlic cloves, finely chopped
- 1/4 cup finely sliced green onions
- 1/4 cup plain bread crumbs
- 1 egg
- black pepper to taste
- For the sauce:
- 2 teaspoons corn starch
- 1/4 cup chicken stock
- 2 tablespoons soy sauce
- 2 garlic cloves, finely chopped
- 1 1/2 teaspoons grated ginger or ginger powder
- 1/4 cup honey
- 2 teaspoons sesame oil
- 1 tablespoon rice vinegar
Instructions
- Preheat the oven to 425˚F.
- Mix together chicken, green onions, egg, bread crumbs, garlic, sesame oil, soy sauce, and pepper. Form into 8 meatballs and place on a baking sheet lined with parchment paper or aluminum foil. Bake for 20-25 minutes or until done.
- Make the sauce: While the meatballs are cooking, whisk together corn starch and 2 teaspoons water in a small saucepan or skillet, then whisk in the chicken stock, soy sauce, garlic, ginger, rice vinegar, honey, and sesame oil. Simmer over med-low heat for 2-4 minutes or until slightly thickened. This can burn very quickly so keep a close watch.
- Drizzle the sauce over the meatballs and serve with rice.
