Nothing says Christmas like freshly baked gingerbread cookies. They can be cut into a variety of festive shapes like stars, snowflakes, or even a gingerbread family. Whether you're decorating them with royal icing for a fun family activity or keeping it simple with just a dusting of sugar, gingerbread cookies will bring a delightful warmth and nostalgia to your holiday baking.

Ingredients

  • 3/4 cup softened butter
  • 1 cup packed brown sugar
  • 1 large egg
  • 3/4 cup molasses
  • 4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1-1/2 teaspoons ground cinnomon
  • 3/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, cream butter and brown sugar until light and fluffy. Add egg and molasses.
  2. In another bowl, stir together the flour, ginger, baking soda, cinnamon, cloves and salt. Gradually add the dry ingredients to the creamed mixture and mix well. Cover and refrigerate about 4 hours or overnight.
  3. Preheat oven to 350 F.
  4. On a lightly floured surface, roll dough to 1/8" thickness. Cut with cookie cutters and place on an ungreased baking sheet.
  5. Bake until the edges are firm, approximately 10-12 minutes.
  6. Place on wire cooling racks to cool completely. Decorate as desired.
