50 MinThese Garlic Dijon Roasted Potatoes are easy to make, crowd-pleasing, and completely addictive! They're the perfect blend of savoury garlic, tangy Dijon mustard, all roasted to golden perfection. They're equally perfect for serving alongside a holiday feast or a weeknight dinner.
Ingredients
- 4 cups of potatoes, washed and chopped into pieces 1-2 bites in size.
- 3 TBSP olive oil
- 2 TBSP dijon mustard
- 3-5 garlic cloves, crushed
- Salt and pepper to taste
- 1 tsp of chopped parsley
Instructions
- Preheat oven to 425 F
- Cut the potatoes into pieces that are 1-2 bite sized.
- In a large bowl, whisk the oil, mustard, garlic, and salt and pepper together very well. Using a spatula, turn the potatoes until evenly coated. If you have the time, let the potatoes marinate in this mixture for up to 1 hour to let the flavour really develop. They will still be delicious if you skip this step, but they'll be better if you don't.
- Spread the potatoes over a baking sheet lined with parchment paper. Bake for approximately 40-45 minutes or until the potatoes are golden and crispy.
