This classic Italian appetizer combines fresh ingredients like ripe tomatoes, fragrant basil, and garlic over crispy, toasted bread for a bite that’s bursting with flavour. Whether you’re hosting a casual get-together or just craving a fresh, light snack, bruschetta is an easy go-to recipe that never disappoints.

Ingredients

  • INGREDIENTS FOR BRUSCHETTA:
  • 6 Roma tomatoes
  • 1/4 cup basil leaves
  • 5 garlic cloves
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • balsamic glaze (optional)
  • INGREDIENTS FOR TOASTS:
  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup grated parmesan cheese
  • INGREDIENTS FOR THE GLAZE:
  • 1 cup balsamic vinegar]
  • 1 1/2 teaspoons honey

Instructions

  1. MAKE THE BRUSCHETTA TOPPING:
  2. Dice tomatoes. Drain any excess juice and transfer tomatoes to a medium bowl.
  3. Thinly slice the basil into ribbons and add to the bowl with tomatoes.
  4. Finely mince 5 garlic cloves. Mix 1 tsp of minced garlic into 3 Tbsp olive oil and set aside. Add remaining minced garlic to the mixing bowl with tomatoes.
  5. Season tomatoes with 2 Tbsp olive oil, 1 Tbsp balsamic, 1/2 tsp salt and 1/4 tsp black pepper. Stir gently to combine and set aside to marinate for 15 minutes.
  6. MAKE THE TOASTS:
  7. Slice baguette into 1/2” thick slices, slicing diagonally. Brush the garlic infused olive oil on both sides of toasts.
  8. Broil first side until golden brown, then flip the slices over. Sprinkle tops with parmesan cheese and broil until golden brown.
  9. MAKE THE BALSAMIC GLAZE:
  10. Pour 1 cup balsamic vinegar into a saucepan and add 1 1/2 teaspoon honey.
  11. Bring to a low boil, then reduce heat to keep at a simmer for 12-15 minutes.* Stir occasionally until reduced by half. It should lightly coats the back of a spoon. It will thicken more as it cools.
  12. PUT IT ALL TOGETHER:
  13. To serve, spoon the bruschetta mixture over the toasts and drizzle a little balsamic glaze over the top.

Note:

If desired, add some crumbled feta or shredded mozzarella and place under the broiler again until the cheese is just beginning to brown.
