55 MinLasagna soup is everything you love about classic lasagna—rich, cheesy, and hearty—but so much easier to make. This one-pot wonder is perfect for busy nights or cozying up on a chilly day.
Ingredients
- 1 pound Italian sausage or ground beef
- 1 tablespoon onion powder
- 1 tablespoon ground oregano
- 2 teaspoons minced garlic
- 2 tablespoons tomato paste
- 28 ounce can diced tomato or whole tomato (break apart with your hands or a fork)
- 6 cups chicken broth
- 2 tablespoons dried basil
- salt and pepper to tast
- 10 ounces of your choice of pasta
- Cheese Mixture
- 8 ounces ricotta
- 1/2 cup parmesan cheese
- 1 cup shredded mozzarell
- 1/4 teaspoon salt
- pinch of pepper
Instructions
- Brown sausage or ground beef for 6-8 minutes. Drain excess fat. Add onion powder, garlic, and oregano. Stir in tomato paste.
- Add tomatoes, basil, and chicken stock. Bring to a boil.Reduce heat and simmer for approximately 30 minutes. Meanwhile, in another pot, cook the noodles. Only cook to al dente to avoid them becoming soggy when added to the soup.
- In a small bowl, mix all cheese ingredients.
- When noodles are done, strain and add to the soup.
- To serve, add a small spoonful of the cheese mix to the bottom of the bowl and slowly add soup.
