Whether you're leaving a plate out for Santa, or just enjoying them with a mug of hot cocoa by the fire, these chewy, lightly cinnamony snickerdoodles are sure to bring a little extra cheer to the season.
Ingredients
- 1 cup softened butter
- 1 1/2 cups sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 3/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla, and blend for another minute or 2.
- In another bowl, stir together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture.
- In a small bowl, mix together cinnamon and sugar.
- Roll the dough into small balls or use a small cookie scoop. Drop into the cinnamon and sugar mixture and coat well.
- Place on a baking sheet lined with parchment paper. These will puff up in the middle while baking. If you prefer a flatter cookie, use your fingers or the back of a spoon to flatten the balls slightly.
- Bake for 12-15 minutes.
- Transfer to wire cooling racks.
