Snickerdoodles are a timeless favourite that embody the warmth and nostalgia of the season. Whether you're leaving a plate out for Santa, or just enjoying them with a mug of hot cocoa by the fire, these chewy, lightly cinnamony snickerdoodles are sure to bring a little extra cheer to the season.

Ingredients

  • 1 cup softened butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla, and blend for another minute or 2.
  3. In another bowl, stir together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture.
  4. In a small bowl, mix together cinnamon and sugar.
  5. Roll the dough into small balls or use a small cookie scoop. Drop into the cinnamon and sugar mixture and coat well.
  6. Place on a baking sheet lined with parchment paper. These will puff up in the middle while baking. If you prefer a flatter cookie, use your fingers or the back of a spoon to flatten the balls slightly.
  7. Bake for 12-15 minutes.
  8. Transfer to wire cooling racks.
