Ingredients
- 1 spaghetti squash
- olive oil
- sea salt and freshly ground black pepper
- 1/4 cup Parmesan cheese
- ¼ cup heavy cream
- 1 egg, beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- ½ teaspoon salt
- 1/4 teaspoon ground black pepper
- ½ cup shredded Cheddar cheese
Instructions
- Preheat the oven to 400°F.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of the squash with olive oil and sprinkle with salt and pepper.
- Place the spaghetti squash cut side down on a baking sheet and use a fork to poke holes. Roast for 30 to 40 minutes or until lightly browned on the outside, fork tender, but it should still a little bit firm. The time will vary depending on the size of the squash.
- Once it's cooled enough to handle, use a fork to scrape and fluff the strands from the sides of the squash.
- Reduce oven temperature to 350°F.
- In a mixing bowl, blend together Parmesan cheese, cream, egg, garlic powder, basil, oregano, thyme and pepper flakes, salt, and pepper.
- Add the squash strands and mix thoroughly.
- Fill both halves of the squash with the mixture and top with shredded cheddar cheese. Alternatively, you can bake this mixture in a casserole dish.
- If baking inside the squash, place them on a foil lined baking sheet for easier cleanup.
- Bake in preheated oven until browned and set, about 30 minutes.
