This gooey, cheesy baked spaghetti squash is the perfect balance of indulgence and health, making it a feel-good dinner that satisfies all those autumn cravings. Ingredients

  • 1 spaghetti squash
  • olive oil
  • sea salt and freshly ground black pepper
  • 1/4 cup Parmesan cheese
  • ¼ cup heavy cream
  • 1 egg, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • ½ teaspoon salt
  • 1/4 teaspoon ground black pepper
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of the squash with olive oil and sprinkle with salt and pepper.
  3. Place the spaghetti squash cut side down on a baking sheet and use a fork to poke holes. Roast for 30 to 40 minutes or until lightly browned on the outside, fork tender, but it should still a little bit firm. The time will vary depending on the size of the squash.
  4. Once it's cooled enough to handle, use a fork to scrape and fluff the strands from the sides of the squash.
  5. Reduce oven temperature to 350°F.
  6. In a mixing bowl, blend together Parmesan cheese, cream, egg, garlic powder, basil, oregano, thyme and pepper flakes, salt, and pepper.
  7. Add the squash strands and mix thoroughly.
  8. Fill both halves of the squash with the mixture and top with shredded cheddar cheese. Alternatively, you can bake this mixture in a casserole dish.
  9. If baking inside the squash, place them on a foil lined baking sheet for easier cleanup.
  10. Bake in preheated oven until browned and set, about 30 minutes.
