This super easy and delicious pasta dish is perfect for dinner when you’re short on time and/or energy. This pasta dish combines juicy cherry tomatoes, creamy Boursin cheese, fragrant olive oil, and a touch of heat from red pepper flakes. It's so yummy it’s bound to become a staple in your kitchen. Plus, it’s versatile enough to customize based on what you have on hand or what you’re craving!

Ingredients

  • 1 pint cherry tomatoes
  • 1 package Boursin cheese
  • 1/4 cup olive oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 12 oz pasta (your favorite kind)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Your Oven: Start by preheating your oven to 400°F.
  2. Prep the Dish: In a large baking dish, add your cherry tomatoes. Nestle the Boursin cheese in the center of the tomatoes. Drizzle the olive oil over the tomatoes and cheese.
  3. Season: Sprinkle the red pepper flakes, salt, and pepper over the dish. Feel free to adjust the amount of red pepper flakes to suit your spice preference.
  4. Bake: Pop the dish into your preheated oven and bake for about 25-30 minutes, or until the tomatoes have burst and the cheese is melty and slightly golden.
  5. Cook the Pasta: Cook the pasta while your tomato and cheese mixture is baking.
  6. Combine: Once the tomatoes and cheese are done, remove the dish from the oven. Use a large spoon to mash and mix the tomatoes and cheese together, creating a creamy sauce. Add the cooked pasta to the baking dish and toss everything together.
  7. Garnish and Serve: Finish with a sprinkle of fresh basil or parsley if you like. Serve hot and enjoy!

Tips and Variations:

  • Cheese Swap: You can easily swap Boursin cheese for feta if you prefer a slightly tangier flavour.
  • Add Protein: For a heartier meal, add some grilled chicken, shrimp, or chopped bacon or Italian sausage.
  • Extra Veggies: Feel free to throw in some spinach before baking for added nutrition. Mushrooms are a tasty and nutritious addition too, but because they release a lot of moisture during cooking you’ll want to sauté them in a separate pan before adding them to the dish.
