Ingredients
- 1 pint cherry tomatoes
- 1 package Boursin cheese
- 1/4 cup olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 12 oz pasta (your favorite kind)
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat Your Oven: Start by preheating your oven to 400°F.
- Prep the Dish: In a large baking dish, add your cherry tomatoes. Nestle the Boursin cheese in the center of the tomatoes. Drizzle the olive oil over the tomatoes and cheese.
- Season: Sprinkle the red pepper flakes, salt, and pepper over the dish. Feel free to adjust the amount of red pepper flakes to suit your spice preference.
- Bake: Pop the dish into your preheated oven and bake for about 25-30 minutes, or until the tomatoes have burst and the cheese is melty and slightly golden.
- Cook the Pasta: Cook the pasta while your tomato and cheese mixture is baking.
- Combine: Once the tomatoes and cheese are done, remove the dish from the oven. Use a large spoon to mash and mix the tomatoes and cheese together, creating a creamy sauce. Add the cooked pasta to the baking dish and toss everything together.
- Garnish and Serve: Finish with a sprinkle of fresh basil or parsley if you like. Serve hot and enjoy!

- Cheese Swap: You can easily swap Boursin cheese for feta if you prefer a slightly tangier flavour.
- Add Protein: For a heartier meal, add some grilled chicken, shrimp, or chopped bacon or Italian sausage.
- Extra Veggies: Feel free to throw in some spinach before baking for added nutrition. Mushrooms are a tasty and nutritious addition too, but because they release a lot of moisture during cooking you’ll want to sauté them in a separate pan before adding them to the dish.
