A delightful one-pot pasta dish that brings together the fresh flavours of tender asparagus and succulent chicken in a rich white wine sauce. Ingredients

  • 2 tbsp olive oil
  • 2 skinless and boneless chicken breasts, diced
  • 3 garlic cloves, crushed
  • Grated zest of 1 lemon
  • 1 tbsp dried oregano
  • 1 cup white wine
  • 3 1/4 cusps chicken broth
  • Salt
  • Freshly ground pepper to tast
  • 1 lb any short pasta
  • 1 zucchini, cut into small pieces
  • 2 cups sparagus, cut into small pieces
  • 10 fresh basil leaves

Instructions

  1. In a large skillet, at medium heat, sear the chicken breast pieces in olive oil.
  2. Add garlic, lemon zest, oregano, wine, chicken broth, salt and pepper, stir well. Cover and bring to a boil.
  3. Add pasta, adjust heat to medium-low and simmer uncovered for about 10-12 minutes, stirring regularly.
  4. Add zucchini, asparagus and basil leaves and cook for about 3-5 minutes.
  5. Adjust seasoning if needed.
