Ingredients
- 2 tbsp olive oil
- 2 skinless and boneless chicken breasts, diced
- 3 garlic cloves, crushed
- Grated zest of 1 lemon
- 1 tbsp dried oregano
- 1 cup white wine
- 3 1/4 cusps chicken broth
- Salt
- Freshly ground pepper to tast
- 1 lb any short pasta
- 1 zucchini, cut into small pieces
- 2 cups sparagus, cut into small pieces
- 10 fresh basil leaves
Instructions
- In a large skillet, at medium heat, sear the chicken breast pieces in olive oil.
- Add garlic, lemon zest, oregano, wine, chicken broth, salt and pepper, stir well. Cover and bring to a boil.
- Add pasta, adjust heat to medium-low and simmer uncovered for about 10-12 minutes, stirring regularly.
- Add zucchini, asparagus and basil leaves and cook for about 3-5 minutes.
- Adjust seasoning if needed.
