Ingredients
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup peanut butter
- 1/4 cup shortening
- 1/4 cup margarine or butter, softened
- 1 large egg
- 1 1/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Mix the sugar, brown sugar, peanut butter, shortening, margarine or butter and egg in a large bowl.
- Stir in flour, baking soda, baking powder and salt. Cover and refrigerate about 2 hours or until firm.
- Heat the oven to 375˚F.
- Shape dough into 1 1/4 inch balls. Place about 3 inches apart on an uncreased cookie sheet.
- Flatten in criss-cross pattern with fork dipped in sugar.
- Bake 9-12 minutes or until light brown(depending on your oven). Cool 5 minutes on wire rack.
