These melt-in-your-mouth peanut butter cookies are a nostalgic favourite, perfect for satisfying that sweet-salty craving. Whether you're whipping up a batch for a cozy night in or sharing with friends and family, this simple recipe delivers maximum flavour with minimal effort.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup margarine or butter, softened
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Mix the sugar, brown sugar, peanut butter, shortening, margarine or butter and egg in a large bowl.
  2. Stir in flour, baking soda, baking powder and salt. Cover and refrigerate about 2 hours or until firm.
  3. Heat the oven to 375˚F.
  4. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on an uncreased cookie sheet.
  5. Flatten in criss-cross pattern with fork dipped in sugar.
  6. Bake 9-12 minutes or until light brown(depending on your oven). Cool 5 minutes on wire rack.
