Moist and buttery with a light lemon flavour.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 1/2 tbsp grated lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup icing sugar

Instructions

  1. Measure first 3 ingredients into a bowl. Stir and set aside.
  2. Cream butter and sugar in large bowl. Add eggs 1 at a time, beating well after each addition.
  3. Add flour mixture in 3 parts, alternating with milk, and stirring after each addition until just combined. Add lemon zest. Stir until just combined. Spread into greased and floured 9x5x3” loaf pan.
  4. Bake at 325 degrees for 1 hour or until wooden pick inserted in centre comes out clean.
  5. GLAZE: Stir lemon juice into icing sugar is small bowl until smooth. Randomly poke holes in loaf with wooden pick. Pour lemon juice mixture over hot loaf. Leave in pan until completely cooled.
